Anzac Biscuit Chocolate Bites

V - GF - DF - RSF - EF



Ingredients:

1/2 cup fine almond meal

2 1/2 cups quick oats (I used Ceres Organics Oats)

1/2 cup desiccated coconut

3 Tbsp chis seeds

1/2 cup + Tbsp coconut oil

1/3 cup brown rice syrup (or honey for non-vegans)

1 tsp vanilla extract

Melted chocolate for drizzling


Instructions:

  1. Preheat oven to 140 degrees an line a 9x9 inch baking tray with baking paper.

  2. Mix all the ingredients together in a large mixing bowl (except the chocolate).

  3. Pour into the baking tray and press down firmly.

  4. Bake for 30-40 minutes or until golden brown on top.

  5. Allow to cool and then slice into small bite-sized pieces (4x4).

  6. Lastly drizzle over the melted chocolate and allow to set before serving.

  7. Store in the fridge in an air-tight container.
