Avocado and Mango Mexican Salsa

V - GF - DF - SF - NF - EF

Ingredients: 6 servings

1 Ripe avocado, diced

1 red onion, diced

1 red capsicum, diced

1 fresh mango, peeled and diced

juice of 2 limes

1 generous handful of fresh coriander, roughly chopped

1-2 Tbsp jalapenos, finely chopped

Sea salt and black pepper to season


Method:

1. Add the mango, avocado, red onion, capsicum and coriander to a large bowl and mix together.

2. Pour over the lime juice and season with salt and pepper.

3. Enjoy! Store in the fridge for up to 3 days.
