Banana Peanut Butter Overnight Oats

Makes 2 serves



1/2 banana, mashed

2 Tbsp peanut butter (no additives - pics is a good brand)

1/4 cup greek yoghurt or coconut yoghurt

3/4 cup almond milk

1 Tbsp brown rice syrup

1 tsp vanilla extract


1 cup oats (i use redmill for a gf option)

1 Tbsp chia seeds

1 tsp cinnamon


In a medium sized bowl mash the banana and then add in the remaining wet ingredients, and mix thoroughly until smooth. Then add in the dry ingredients and mix thoroughly again. Cover the bowl and store the mixture in the fridge for 2 hours or overnight (you can divide it into jars or bowls). To serve add your choice of toppings I used a sprinkle of chia seeds, cacao powder, and banana.
