Easy Fluffy Banana Oaty Pancakes

These Easy Fluffy Oat Pancakes are a fun way to kick start the day! A healthy breakfast recipe that is full of health boosting ingredients such as bananas, oats, ACV, and you can add more nutrients based on your choice of toppings! They can be made quickly and easily in a blender and are refined sugar free.
These pancakes are great weekend treat in my house, if only I could make them as quickly as they disappear! Our favourite toppings are nut butter, blueberries and a drizzle of maple or brown rice syrup. It’s a perfect way to treat yourself without worrying what is going into your body!
I used my NutriBullet to make these and it created a nice smooth batter!
What kitchen tools you will need:
Medium-sized non-stick frying pan
¼ cup measure
Oats/Oat flour. Substituting for another flour can change the consistency. If you are after a full gluten-free option, then you can use ½ gluten free flour with ½ almond meal as an option. Otherwise ensure your oats source are certified gluten-free which is why I like to use Bob’s Red Mill brand.
Dairy-free milk. If you are particularly bothered about using dairy-free milk, then regular cows milk will work just the same.
Brown rice syrup or Maple Syrup. To keep the recipe vegan, brown rice syrup and maple syrup work well, otherwise if you are not vegan a good quality honey will also work.
Makes roughly 10 pancakes
1 ripe banana
1 heaped cup rolled oats (I used Redmill for GF)
1/4 cup dairy-free milk (I used almond)
1 Tbsp baking powder
1 Tbsp Apple cider vinegar
1 Tbsp Brown rice syrup or maple syrup
Optional: 1 tsp vanilla extract
Toppings: fresh blueberries, pomegranate seeds and brown rice syrup.
Blend the ingredients together adding a little more almond milk if your mixture is too thick. You don’t want the mixture to stick firmly to a spoon, you want it to spread a little in the pan. Heat a non-stick frying pan over medium-high heat, once hot add 1/4 cup of your mixture and spread to desired thickness using the back of a spoon. Then turn the heat down to medium, and cook for a couple of minutes on each side. Serve with your favourite toppings.
