Mixed Berry Chia Seed Jam

Makes 1x 400g Jar (roughly)


2 cups mixed berries, frozen

1/2 cup chia seeds

1 tsp vanilla extract

1/2 cup water

3 Tbsp brown rice syrup (or maple syrup)


Put the mixed berries into a bowl and allow to them thaw out. Once thawed place into a blender along with remaining ingredients and pulse until roughly mixed (2 pulses). Transfer the mixture into a larger bowl and whisk everything together. Place the bowl in the fridge overnight, and in the morning taste and adjust sweetness. Remember this is a low sugar option so don't go overboard with the added sweetener, but it's a great way to gradually change your taste buds. Store in the fridge for 1-2 weeks.
