Natural Coconut Choc Trail Mix

GF - DF - V - RSF - EF


2 1/2 cups mixed nuts/seeds (I used almonds, cashews, pecans, hazelnuts, pumpkin seeds)

1 cup Coconut flakes

100g 85% dark chocolate, cut into small chunks

5 Tbsp coconut oil

2 Tbsp coconut sugar

2 tsp cinnamon

1 tsp vanilla extract


Preheat your oven to 150'degrees on fan bake, and line a baking tray with baking paper. In a small saucepan melt the coconut oil, sugar, cinnamon and vanilla together, mixing until the oil has melted. Mix all the nuts, seeds, and coconut together and spread them across the lined baking tray. Pour over the wet mixture and mix everything together until evenly coated. Bake the trail mix for 20 minutes (this will depend on the strength of your oven), turning a few times to prevent burning. Allow to cool before adding in the chocolate, then mix it through and store the mix in jars or Eco-friendly snack bags.
