Oil-free Pesto and Cherry Tomato Pasta

Ingredients:
1 1/2 avocado
2 handfuls of whole cashews (soaked overnight preferrably)
1/2 lemon, juice
2 handfuls fresh spinach
1-2 handfuls fresh basil
1 handful fresh parsley
3 cloves garlic
Salt and pepper
2 handfuls of nutritional yeast (can be substituted with Parmesan for non-vegans)
1/2-1 cup water (adjust as you go)
1 cup cherry tomatoes, halved
Method
Simply blend together all the ingredients apart from the tomatoes until smooth, then mix it in with the cooked pasta and halved cherry tomatoes. I used rice quinoa pasta by Ceres Organics for this recipe.
