Passionfruit Bliss Balls

Makes around 20 bliss balls

Ingredients:

4 medjool dates, pitted

1/2 cup rolled oats (I use Redmill brand to ensure gluten-free)

1 Tbsp coconut oil

1/2 cup desiccated coconut

1/2 cup + 2 Tbsp ground almonds

1/4 cup strained passionfruit pulp (approx 6 fresh passionfruit)


Method

\ straining the passionfruit. Spoon the pulp into a fine sieve, then use the back of a spoon to scrape the seeds and pulp around extracting as much pulp/juice as possible. Put the coconut, oats, and ground almonds into a food processor and pulse until you have a fine textured dry mixture. The odd chunky bit is fine. Add the dates, coconut oil and passionfruit pulp to the food processor and whizz everything together until combined. The mixture will come together in a ball. Roll teaspoon measures of the mixture into balls and then refrigerate to firm them up. Store in the fridge or freezer.
