Pizza Roasted Chickpeas

Ingredients:

2 400g cans chickpeas

1 tsp dried oregano

1 tsp dried basil

1/2 tsp garlic powder

1/4 tsp chilli powder

1/4 tsp salt

2 Tbsp extra virgin-cold pressed olive oil



Method

Preheat your oven to 200’degrees and line a baking tray with baking paper. Rinse and drain the chickpeas, and then lie them out on a clean tea towel and pat dry. Allow them to sit for 15-30 minutes, the longer you give them to dry the more crisp they will get. Meanwhile add the oregano, basil, garlic powder, chilli, and salt to a small bowl and mix them together. When the chickpeas are dry enough put them onto the baking tray and bake for 20 minutes. Take them out and flip them around, then put them back in the oven to cook until hardened, be careful at this point as they can burn easily. Once the chickpeas are done transfer them to a bowl along with the olive oil and flavour mixture. Mix them until the chickpeas are evenly coated. Store them in a jar or Eco-friendly snack bags!
