Protein Cookie Dough Bites

1/2 cup Nuzest Vanilla Protein Powder

1/4 cup coconut flour

1/4 cup ground flax seed

1/3 cup no-stir creamy almond butter or peanut butter

2 Tbsp golden monk fruit sweetener (or brown rice syrup)

1/2 tsp baking soda

1/4 tsp salt

1/2 cup almond milk

2 Tbsp melted coconut oil

1 tsp vanilla extract

1/4 cup dark chocolate chips


  1. In a large mixing bowl, combine all dry ingredients except chocolate chips.  Mix thoroughly.

  2. Add in wet ingredients.  Mix first with a spatula then use your hands to knead the dough.

  3. Mix chocolate chips into the batter.

  4. Firmly press cookie dough into a lined 8″ x 8″ baking pan. Place in freezer at least one hour to set.

  5. Remove from freezer, cut into 16 bite sized pieces and eat! Store in fridge or freezer.
