Raw Bounty Bars

Makes 12 small bars

Ingredients:

1 cup coconut milk

5 Tbsp brown rice syrup

4 Tbsp coconut butter

2 cups desicated coconut

pinch of salt

200g 85% dark chocolat



Method

In a medium sized pot over a low heat add the coconut milk, coconut butter, brown rice syrup, and salt. Stir the mixture constantly until it has melted and is well combined. Take the mixture off the heat and fold in the desiccated coconut (you may wan to transfer to a bowl if your saucepan is not big enough). Pour the mixture into a lined loaf tin and press it down firmly. Place the loaf tin in the freezer and allow it to set for 2-3 hours. Then slice the bounty mixture into 12 small bars and coat each one completely with melted chocolate. One by one add each bar to a tray lined with baking paper, and when you are done freeze them again for another 30 minutes to allow the chocolate to set. They are now ready to eat! Store them in the fridge or freezer.
